Ingredients for 10 Persons
- 300 g wheat flour
- 180 g butter
- 150 g brown sugar
- 20 ml lemon juice
- 2 g lemon zest, grated
- 60 g whole egg
- 1 g salt
- 650 g apples, peeled and pitted
- 75 g sugar
- 30 ml lemon juice
- 10 g starch
- 2 g cinnamon, ground
- 600 g frischli Vanilla Pudding
- 75 ml frischli Whipping Cream 30 %, whipped
Preparation
- Combine flour, butter, sugar, lemon juice and zest, egg and salt into a shortcrust pastry and leave to cool for one hour.
- Finely dice apples, heat with sugar, simmer for 5 minutes, bind with lemon juice and starch und mix in cinnamon.
- Divide the dough into 10 equal pieces, roll out, cover 10 greased small tartelette tins (12 cm), fill with apple compote and add excess dough in a lattice pattern. Bake the tartelette tins at 180 °C for 25 minutes until they turn golden brown and leave to cool down.
- Turn out tartelette tins, serve with frischli Vanilla Pudding and garnish with frischli Whipping Cream 30 %.
Tip: You can also serve the pudding with premade apple tarts.
